Three things Thursday-big hats, compliments & Quesadilla

1) The past 24 hours I have been trying to get my surgery scheduled and have had little to no luck. It seems that everyone is booked between now and fall. Really?!? Long story short I am going to do a post on the whole reason I am having a 2 day (4-8 hour) procedure done. 2011 for heath has not been a good year thus far. Female issues and a procedure all the way down to the latest and greatest I found out about just a couple of weeks ago.

 Let's just say I am wearing more hats then ever before.

A dear friend of mine suggested I look outside the box and meaning outside of the box, she was implying I look at surgeons that are not listed on the recommended paper my main doctor suggested.
 Right, what a good idea!!  Now why didn't I think of that in the first place? Maybe because I have been so busy freaking out about this whole thing, too busy running half marathons the past 3 weekends, planting 27 rose bushes or it could be I am over whelmed. All are good excuses. So this morning I dialed up a few names that I found after google searching and found Dr. Miller. He can take me in June! OMG I will take it I said firmly to the woman on the phone. So I am booked, scheduled my PTO at work and even got me a nice driver willing to take me at the ungodly hour of 7:00am up the Baltimore beltway in the nasty traffic. June 30th and July 1st in case you were wondering.

2) After combing stalking  my favorite blogs I stumbled upon a new blog that seems to be a woman who is sort of just like me. If that can even be the case. After reading her blog from today's post to the past 3 months she came up with a funny post called "Free Compliments" I thought that was a cute idea and had to steal her idea. Whoops..... So instead of stealing one I stole the idea and changed them to be more in what I need to hear right now.

3) Mash-Potato Quesadilla might just be my new FAVORITE thing to eat!!!


I love my self some Mexican food BUT this little bugger I have to say I love more then a cheese and chicken quesadilla. Last night after coming home from work stressed and depressed, Mr. P suggested we hit up happy hour and catch up. We have been so busy the past couple of days it was time to sit face to face and chat with no one around. Mom was in town for a visit so I had spent time with her and neglected to spend time asking my sweet P how things have been at work or talk about my up and coming surgery that has been lingering in my mind. He suggested Mathews 1600 just about 2 blocks from the house and walking distance.
Well we saw they had added a few new specialty items on the menu so we quickly discussed trying a new item. Mr.P suggested the quesadilla knowing how much I love them so much so I said promptly YES! I am so in love................ Ok not that I can love food as much as someone but if I can say this and stand firm this might just be one of my favorite things to eat on earth! YES I can actually say this. The potato, cheese and bacon melt in your mouth making you want more. As soon as I got home I quickly looked up how to make them as this is something that is going on my MUST make list for this coming weekend..... I figured you all might be interested in the oddly wonderful side dish as well.

Enjoy and I hope you love as much as I do!!

Ingredients
  • 2 cups mashed potatoes
  • 6 slices cooked bacon, crumbled
  • 1/4 cup sliced green onions
  • 8 flour tortillas
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons softened butter
  • 1 cup salsa
  • 1/4 cup sour cream

Directions

  1. Stir together the mashed potatoes, bacon, and green onions. Spread the mashed potato mixture onto one side of half of the tortillas, spreading to within 1/2 inch of the edges. Sprinkle the shredded cheese on top of the mashed potatoes and top with the remaining tortillas. Lightly butter each side of the quesadillas.
  2. Preheat a large skillet over medium heat. Place a quesadilla into the preheated pan, and cook until golden brown and crispy, then turn over, and continue cooking on the other side until browned, 2 to 3 minutes per side. Repeat with remaining quesadillas. Serve with salsa and sour cream.

ALMOST...... wordless Wednesday-no pooping in dog school!







I was reminded yesterday as to why this sign is right out front of Milo and "ME" 's Tuesday night class.

 Our adventures never seem to end. Last night I was at school with him and a little nervous at that since the week before last didn't end as good as we had hoped. Milo didn't seem to want to pay attention to me at all and not even the instructor. Milo sit.....nothing! Milo down......nothing! Milo come here...... nothing! The instructor informed me that it has to be a stage in the age he is right now ( 13 months) and be patent and keep working with him.

So,

Last night he was wonder dog!! Right on point with all commands and tricks. Followed my lead, would listen and even did a perfect (bang your dead) lay down on his side.


 BUT,
My perfect dog pooped right in the middle of class! With no warming, no crying and no barking! I was so embarrassed. Milo was not but I was for sure! The instructor informed me it happens all the time but I could only say I am so so sorry!!!! Here we are 2 weeks in a row and not very classy in class.

Oh well life goes on.................
If I give you the puppy eyes will you forgive me?


Mom I didn't mean to poop in school!

Well today is hump day and we are getting some much needed rain for my new bushes and garden! I have so much to fill you all in on. I got the shutters up. Before and After  pictures to show. Half of the rose hedge in (thank you mom!!!) and 2 race recaps to go over. Let me see how my week goes so I can share in so much fun I have been having the past week.

Three things THURSDAY-Cinco style!

For those of you that know me, you know how much I love Mexican food. Not only do I love Mexican food but I love Mexican drinks. That includes the Sangria, Margarita and not to forget an ice cold cervasa.
I think about Mexican food all the time( tacos, burritos and enchiladas). In fact we use so much hot sauce in our house that its almost a joke when we run out of it. We have mild, HOT, burn your butt off hot (yes the bottle does say this) and green/red chili sauce. This leads me to my 3 things for this Thursday....


1. The "ME" version of the Mexican Margarita!!

    Not only do I love these little buggers but these are packed full of calories so I try not to drink them or make them too often. I know you can get the "skinny" version of them BUT why bother with that as the calories are not that far off and if I am going to have 1 or 2 of these on my patio I should have them with out thinking too hard of how much I will have to run to burn the calories off. So here is what my recipe is.....
  • 6 fluid ounces tequila
  • 2 fluid ounces triple sec
  • 1 (6 ounce) can frozen limeade concentrate
  • salt for the rim of the glass and sliced limes to garnish
  • blend until ice is crushed in blender (on extra hot days i leave big chunks of ice in mine)

A perfect drink for a hot day on the patio. Olay!
2.  My Second most favorite thing is Mexican Art. I love all kinds of art but I tend to find my self VERY interested in this country's art. I am not sure why but I went to Mexico for he first time when I was 21 years old with a girlfriend of mine on our 21'st birthday cruise. We walked threw the streets of Puerto Viallarta and looked at all the little shops and saw so many neat dolls, paintings and pottery pieces. That could have been the start or it could have been later in the years when I went with some girls friends from later in life trolling the streets of Cabo in search of the next silver picture frame. I have a small collection of these (ok I have like 20 picture frames).

Amazing piece of art for sale in Cozumel. It didn't fit in the carry on so I couldn't buy it. DARN.....
I have about 5 of these little guys and LOVE them!!!!

Thank you for the emails readers on the well wishes and feeling better by Saturday. Today I woke up feeling about 75% better then yesterday. 2 days until race day!!!!!!

Almost wordless (ah-CHOO) Wednesday

Ohhhh-Three Days Until Race Day and........


I am under the weather! Itchy watery eyes, stuffed up nose and a really bad soar throat! I started thinking about the last time I was sick with this and it's been a really long time. It feels like allergies so I have been eating the Clariton like candy it's a Fred Flintson vitamin. (i use to love those little buggers and esp the grape ones)

Does anyone have any good ideas of how to make it leave by say Friday? Yes I know that is 2 days but I really don't want to walk a Half Marathon but I will if I have to just to get my free beer at then end and the bling.

Off to blow my nose..............

Manic Monday


Boy oh boy do I wish it were still Sunday........

After a wonderful quick mini vacation to the beach we got home yesterday to take care of the domestic things around the house. You know clean the house before your cleaning lady shows. (YES I do this as I don't want her to know how dirty our house really gets with Milo man and Mr Fats)
The rooster went off at 4:15am and it felt like I never went to bed. I stayed up way too late getting that last coat of Navy Blue on the side door. It looks so good and now makes me super excited to see what the shutters will look like after they are put back up over this coming weekend. Only 12 more days until Mom comes for a visit and I still haven't gotten the shutters up, trim done in the kitchen and my pictures hung in the guest room. All things I planned to do before she arrives. Yea I have time but Saturday I will be running race number 2 for April. The Fredrick Half Marathon is race number 2 in a 3 week in a row crazy experiment to move up to a new moon level with my Half Fanatics club. Yes I am that crazy to run that many in a row.

Looks like a flat course for the most part!

So this Monday can just go away already!!

Got into work before 6am and was ready to tackle my day head on. Came in after only leaving work a couple hours early to a boat load of emails. They never end!!!!!

Shortly after that Mr. P called to tell me that his van died in front of the house. HA HA this is the same van that everyone in our neighborhood hates.(oh great hear goes more bad letters from those neighbors that hate us) Not because it is sitting on cinder blocks all because it is bright blue and says Sam Adams on it. You know the beer company and it doesn't even have the words beer or BEER or booze or liquor on it. Crazy! Tonight we are going to try and see why it won't turn over. The inner car mechanic in us both are going to try and figure that beast out. After that I would really like to get a 3 mile walk/run recover work out in with Milo before we go into 3 days of steady rain and have my legs work them self out before Saturday.

This is just missing the big Sam Adams guy on the side.
So that is that and I really hate Mondays but tomorrow is Tuesday and a much better day is planned with another of school. Also not to forget one day closer to Mom's visit!!

Island to Island Half Marathon-Race Recap

Island to Island Half Marathon use to be called the OCMD also known as the Ocean City Maryland Half Marathon but for some reason they changed it this year to the Island to Island Half. This was my first year running this event and my 4th half in 4 months.
